Today’s vegan bento box lunch is very healthy, gluten free, and soy free! The baked chickpea cakes are adapted from a few recipes. I will put a full recipe for them up on the blog this week. The chickpea cakes contain oats, brown rice, pea protein, and nutritional yeast, so they are packed with fiber and protein. To round out the vegan bento, I added some sautéed spinach, brown rice, and a couple of the season’s late sungold tomatoes from my garden.
For a dipping sauce, I made a super easy vegan hollandaise sauce. Personally, I’ve never had “real” hollandaise sauce. In fact, before I was vegan, I hated mayo and basically avoided all creamy sauces. This sauce however is very yummy and easy to make! It’s just 2 tbs vegan may, 1/2 tsp mustard, 1/2 tsp sweet relish, and a dash of paprika.
